How long does an open thickened cream last. It is still within its use by date but was opened 7+days ago?

I want to use it to make my ganache|||Pour some into your measurer and give it a sniff if it looks ok. It should still be ok, but you never know until you check it.|||That will depend on temperature %26amp; exposure to air. Test for sourness.
